    Default Potato Candy

    1 sm. baked potatoes
    1 1/2 to 2 boxes
    confectioners' sugar (no sub for this)
    1 tsp vanilla
    crunchy peanut butter (I like the smooth peanut butter)

    Peel; mash in a Lrg. mixing bowl. Add sugar and vanilla gradually until mixture is of consistency of dough; roll out on waxed paper. Spread generously peanut butter; roll into log. Chill for several hours or over night. Slice; store in refrigerator. Rolls may be frozen.

    Hint; I don't use wax paper all the time (sprinkle counter w/ confectioners' sugar)

    Thank you for posting this recipe. I saw this posted somewhere a few years ago & thought it looked like it might be good, was going to make it but health issues got in the way. Will be making this as soon as we have some left over potatoes.

    Margaret K,
    I always use Left over baked potatoes, for this recipe. That one potatoe seems to go a long ways.
