Egg Salad with Prosciutto and Grainy Mustard Pitas
6 hard-cooked eggs
2 oz cream cheese, softened
6 tbs mayonnaise
2 tsp chives
2 tsp basil
1/8 tsp salt
dash pepper
1 slice prosciutto, minced (yes, you can go to the deli and buy ONE slice;->)
1/8 tsp grainy mustard
3 pita, halved and warmed
Place eggs in medium bowl. Mash with pastry blender or fork until crumbled. Add cheese. Mash until combined. Stir in mayonnaise until smooth. Stir in all remaining ingredients. Spoon mixture into pita halves and serve with carrot and celery sticks. Makes 6 servings.
