Apple Pickles

7 lbs of hard apple
4 1/2 C sugar
3 C cider vinegar
3 C water
2 TBS whole cloves
2 sticks cinnamon
1 TBS allspice

Prick apples in several places. Place in a 9x13 cake pan (stem up).

Boil for 5 minutes in the sugar/vinegar/ water mixture. Place the
spices in a spice bag and add to the mixture and pour over the
apples in the cake pan. Place in the oven and bake for about 1 1/2
hours at 350 (do not overcook so that the apples get mushy). Put
the apples in jars, pour the liquid over them and seal.


Yields
approx. 4 pints (You may need two cake pans, depending on size of
apples) You can also cut them in half or large slices if you like
and bake them for less time.
