    Talking Mexi-Casserole

    It's simple. But very filling and hardy.

    Ingredients

    2 lbs. ground meat
    2 cans of refried beans
    2 packs of taco seasoning
    2 packs of cornbread mix
    2 cans of whole kernel corn
    2 blocks of cheddar cheese grated
    Diced bell pepper (optional)
    Diced onion (optional)

    Directions


    Brown ground meat and then add in taco seasonings. Spread meat in large baking dish, 11 x 15 approx. Then spread the refried beans on top of meat. In a bowl, mix corn bread according to package directions. Add in drained corn, diced bell peppers and diced onions. Add in half of the grated cheese. Mix and pour over refried beans. Bake according to corn bread directions. Add some cheese on top to melt. When done, cut to your portion size and top with chili, cheese, sour cream, if you like.

    Thank you for this recipe dawn, I made this over the weekend using a couple jiffy box cornbread mixes that I happened to have. We added a can of chopped (drained) chilis to spice it up a bit and it was Really Good. It made for good leftovers too.

    Hey Jeannie,
    That is good that you made it to your taste and added in the chili's. I will try that the next time. And I love having leftovers too.
