Here’s one of our favorite fall side dishes that costs less than $2 for the entire family. The lightly spicy roasted wedges are crispy and wonderful with a light dip of sour cream.
Potatoes are frequently 10lbs for $2.50-$3 several times per year, particularly in the fall months. Alternatively, they can be grown at home in bags with minimal effort as well.
You’ll Need:
1/4 cup vegetable oil
1 Tbs chili powder
2 tsp. onion powder
2 tsp. garlic salt
1 tsp. sugar
1 tsp. paprika
3/4 tsp. salt
1/4 to 1/2 tsp. cayenne pepper
3 1/2 lbs. large potatoes scrubbed clean & cut into wedges (or whatever kind you have)
In a large bowl, toss the potato wedges with the vegetable oil, coating each one. Combine the remaining ingredients, then sprinkle them over the potatoes, toss to coat. Arrange in a single layer on greased baking sheets, parchment paper, or silpats. In a pinch, you can also a line a baking sheet with aluminum foil for easy clean-up and maximum crispness.
Bake at 400 degrees for 30 to 35 minutes or until potatoes are tender and golden brown, flipping once to ensure they’re crispy on both sides.
