BLACK AND GOLD CUCUMBER LOGS
2 CUCUMBERS, UNPEELED
15-OZ CAN GARBANZO BEANS, DRAINED
1 TBS EXTRA-VIRGIN OLIVE OIL
1 TBS WATER
1/3 CUP FRESH LEMON JUICE
1 CLOVE GARLIC, PEELED AND COARSELY CHOPPED
1 1/2 TSP SALT
1/4 CUP DICED BLACK OLIVES
1. CUT OFF ENDS OF CUCUMBERS. CUT EACH CUCUMBER INTO 6 ROUNDS AND LAY THEM FLAT. WITH A MELON BALLER OR GRAPEFRUIT SPOON, GENTLY SCOOP OUT SOME FLESH FROM THE TOP OF EACH CUCUMBER ROUND.
2. IN A FOOD PROCESSOR OR BLENDER, MAKE HUMMUS BY COMBINING GARBANZOS, OIL, WATER, LEMON JUICE, GARLIC AND SALT. PUREE ADDING MORE WATER IF NEEDED FOR CREAMINESS.
3. STIR IN BLACK OLIVES AND SPOON MIXTURE INTO HOLLOWED-OUT PART OF EACH CUCUMBER. PRESENT ON A SERVING TRAY. MAKES 12 LOGS = 82 CALORIES/LOG
