    Default Tex-Mex Macaroni & Cheese Dinner

    Tex-Mex macaroni & cheese
    Baby spinach salad

    Stir a 14 1/2-oz can diced tomatoes with mild green chiles into macaroni and cheese (prepared from a mix or myo). Heat through and serve.

    My husband is not the biggest fan of chilies, or leafy greens, so this recipe gave me an idea of my own.

    When preparing Mac'n cheese, just add a pouch of taco seasoning, and a can of diced tomatoes (drained). It turns out fantastic!

    Hmmmmm...I'm thinking about Mac and cheese with a can of Rotel AND a tbsp of taco seasoning or chili powder...with extra cubes/slices of cheese to make gooey little pockets of melted cheese in the filling...maybe with some cilantro and thinly sliced green onions...

    Sounds good...Rotel is my go-to ingredient whenever I come up with something different and it just 'needs' something! Usually works! LOL!
