    Default Seven Days of Dinners

    Sunday -- Meat Loaf (bake extra for Tuesday), Rice (cook enough for Monday), and Lemony Green Beans (recipe in recipe forum)
    Monday -- Carrot-rice soup (recipe in recipe forum), Cottage cheese and fruit platter, and Low-fat bran muffins
    Tuesday -- Meat Loaf with Gravy (heat sliced meat loaf from Sunday in beef gravy from a jar or a mix), Mashed potatoes, Mixed carrots & peas (frozen)
    Wednesday -- Tex-Mex macaroni & cheese (recipe in recipe forum) and Baby spinach salad
    Thursday -- Finger lickin' chicken drumsticks (see forum), corn on the cob, and Onion rings (frozen)
    Friday -- Spicy gazpacho (see forum), broiled pork chops, buttered new potatoes, and zucchini
    Saturday -- Broiled salmon fillet with pineapple salsa (see forum), couscous (mix), and broccoli

    here's all of them. I listed them in the general recipes forum under 'recipes for days of dinners.' wow! that was three years ago! LOL!
    Lemony Green Beans
    Toss freshly cooked beans with a little freshly grated lemon peel and lemon juice just before serving.

    Carrot-Rice Soup
    Cook 3 cups sliced carrots in 3 cups chicken broth. Add 1 cup cooked rice. Cool; puree in batches in a blender. Stir in 2 cups milk. Heat and serve.

    Tex-Mex Macaroni & Cheese
    Stir a 14 1/2-oz can diced tomatoes with mild green chiles into macaroni and cheese (prepared from a mix or home-made). Heat through and serve.

    Finger Lickin' Chicken Drumsticks
    Season drumsticks with chili powder. Bake chicken at 400? for 30-35 minutes.

    Spicy Gazpacho
    Mix 2 cups chilled Bloody Mary mix, 2 diced tomatoes and 1/2 cup each diced bell pepper and seeded, peeled cucumber. Serve!

    Pineapple Salsa
    Mix 1 1/2 cups fresh or canned diced pineapple, 1/2 cup diced red bell pepper, t Tbsp sliced scallion and 2 tsp lime or lemon juice. Serve with fish or meat.

    shucks, (blushing and shuffling feet)... I was lucky, I grew up planning. my mother made us girls plan menus every week -- including breakfast and lunch. the best breakfast and lunches were what we ate that week -- we always took our lunch because she didn't think that school lunches were nutritious enough! LOL! so it kinda just happens. it's a bit more challenging now with the state of the economy to NOT eat the same ole thing each week. I'm sure that you can tell that my menus are not what they used to be...eating chicken all the time tends to wear on your creativity;-p

    Yeah - the economy really has put a damper on me here too!! But each time you post a menu - it helps me too - I dont necessary use each recipe that week, but I used them from other weeks too Your mother must be proud of you!!!
