    Mexican Hamburger Casserole Recipe
    Ready in: > 5 hrs
    Difficulty: 3
    (1=easiest :: hardest=5)

    1 pound ground beef
    3 cups corn chips
    1 medium onion, chopped
    1 can cream of mushroom soup
    1 can (10 oz. size) Rotel tomatoes
    2 cups grated cheese

    Brown ground beef and drain off fat. Mix well with mushroom soup and
    rotel tomatoes.

    Line bottom of slow cooker with 1 cup of corn chips. Add 1/3 of onion,
    sprinkle with 1/3 of grated cheese and add 1/3 of meat mixture. Repeat
    layers, cover and cook on low 6-8 hours or on high 3 hours.

    You may also bake in a casserole at 325 degrees for 45 minutes.

    I made this and used venison burger and added a can of corn, and added a dollop of sour cream to my serving, VERY tasty!
