    Default Fruity Baked Oatmeal recipe

    Someone asked for an oatmeal recipe (like the oatmeal squares). In this month?s Simple & Delicious magazine had this Fruity Baked Oatmeal recipe in it:



    3 cups quick-cooking oats

    1 cup packed brown sugar

    2 tsp. baking powder

    1 tsp. salt

    ? tsp. ground cinnamon

    2 eggs, lightly beaten

    1 cup fat-free milk

    ? cup butter, melted

    23/4 cup chopped, peeled tart apple

    1/3 cup chopped fresh or frozen peaches

    1/3 cup fresh or frozen blueberries (if using frozen, do not thaw first)



    In a large bowl, combine the oats, brown sugar, baking powder, salt and cinnamon. Combine the eggs, milk and butter; add to the dry ingredients. Stir in the apple, peaches and blueberries.

    Pour into a 8-inch square baking dish coated with nonstick cooking spray. Bake, uncovered, at 350 degrees for 35-40 minutes or until a knife inserted near the center comes out clean. Cut into squares. Serve with milk, if desired. Yield: 9 servings.

    Sounds like a great recipe for when your in a hurry! I was thinking of adding a few chocolate chips hehehe

    This is very similar to my recipe.

    Over night oatmeal

    3 cups old fashioned oats

    1/2 cup packed brown sugar

    2 tsp. baking powder

    1 tsp. salt

    1/2 tsp. ground cinnamon

    3 eggs, beaten

    1 cup yogurt

    1/2 cup milk

    1/4 cup butter, melted

    2 cups frozen fruit of your choice

    1/2 cup raisins

    Combine all ingredients and pour into oiled 8 x 8 pan. Cover and stick in the fridge over night.

    in the morning slide into a cold oven, and bake at 350F for 45min
