    CROCKPOT SWISS CHICKEN CASSEROLE
    6 chicken breasts, boneless and skinless
    6 slices Swiss cheese
    1 can cream of mushroom soup
    1/4 cup milk
    2 cups stuffing mix
    1/2 cup butter or margarine, melted
    Lightly grease crock pot or spray with cooking spray. Place chicken
    breasts in pot. Top with cheese. Combine soup and milk, stirring well.
    Spoon over cheese; sprinkle with stuffing mix. Drizzle melted butter
    over stuffing mix. Cook on low 8 to 10 hours or high 4 to 6 hours.
    Serves 6.

    Jambalaya
    6 to 8 servings
    1 pound boneless, skinless chicken breast, cut into 1-inch chunks
    1 package (13 ounces) Cajun-style smoked sausage, cut into 1/4-inch
    diagonal slices
    2 ribs celery, chopped
    1 medium-sized onion, chopped
    1 medium-sized green bell pepper, chopped
    2 cans (14 ounces each) ready-to-use chicken broth
    1 can (14-1/2 ounces) diced tomatoes, undrained
    1-1/2 cups uncooked long-grain rice
    1 tablespoon Cajun seasoning
    1. In a soup pot, cook the chicken and smoked sausage over medium
    heat for 3 minutes, or until browned, stirring constantly.
    2. Add the celery, onion, and bell pepper, and saut? for 6 to 8
    minutes, or until the vegetables are tender.
    3. Add the chicken broth, diced tomatoes, rice, and Cajun sea soning;
    bring to a boil. Reduce the heat to low, cover, and simmer for 45
    minutes, or until the rice is cooked and the liquid has been
    absorbed.
    4. Remove jambalaya from the heat, and let stand for 5 minutes before
    serving.

    Chow Mein Casserole

    1 lb hamburger
    2 small or one large onion, diced
    1 1/2 cups minced celery
    salt and pepper to taste
    1 can cream of chicken soup
    1 1/2 cups low salt chicken broth
    3 tbsp soy sauce
    1 can chow mein noodles
    1 can cream mushroom soup
    Fry burger lightly crumbling as it cookd. Add celery and onions, and
    continue cooking until slightly transparent. Add rest of ingredients,
    except noodles, and place in baking dish. Bake uncovered 1/2 hour at
    350 . Reduce heat to 300 and cover with noodles. Bake anothe 1/2 hour.
    Serve over hot cooked rice, or more chow mein noodles.
    Can substitute ground turkey or chicken, or use cooked diced chicken.
