Pat, here is the recipe you requested. I didn't mention in my previous email that it is a microwave muffin batter (but I have used it in a regular oven too).

Microwave Bran Muffins Makes 36

2 1/2 cups all purpose flour
2 1/2 tsp baking soda
1/2 tsp salt
3 cups whole bran cereal (shreds)
1 cup boiling water
1 cup brown sugar, packed
1 cup raisins, currants or other dried fruit
2 cups buttermilk
1/2 cup vegetable oil
2 large eggs

Mix flour, baking soda, & salt. Put bran in large bowl. Stir in water then
sugar. Add flour mixture; stir to blend. Stir in raisins. In seperate bowl,
beat / whisk buttermilk, oil and eggs. Stir into bran mixture just until
blended. Line each microwave muffin pan cup then scoop 3 tbsp batter into each. Microwave on HIGH 1 1/2 minutes, rotate pan, microwave 1 1/2 - 2 minutes more until tops spring back. Remove to rack; let stand 2 -3 minutes.

If baking fewer than 6 muffins at once; 50 - 60 seconds for 1 muffin, 1 - 1
1/4 minutes for 2 muffins and 1 1/2 - 2 minutes for 4 muffins. Can refrigerate batter up to 3 weeks.

1 muffin = 120 cal, 3 g protein, 22 g carbohydrates, 3 g fat, 14 mg cholesterol and 210 mg sodium.
