Beef and Potato Casserole- Left Over Layering

Beef and Potato Casserole 2 1/2 to 3 cups diced roast beef 1/2 cup chopped onion 1 cup beef gravy or prepared brown gravy 2 tbs dry white wine 1/4 tsp dried thyme, crumbled 1/4 tsp dried rosemary, crumbled dash garlic powder 1/2 to 1 tsp salt, or to taste 1/4 tsp ground black pepper

    Post Beef and Potato Casserole


    Beef and Potato Casserole
    2 1/2 to 3 cups diced roast beef
    1/2 cup chopped onion
    1 cup beef gravy or prepared brown gravy
    2 tbs dry white wine
    1/4 tsp dried thyme, crumbled
    1/4 tsp dried rosemary, crumbled
    dash garlic powder
    1/2 to 1 tsp salt, or to taste
    1/4 tsp ground black pepper
    beef broth or water, if needed
    2 cups prepared mashed potatoes, seasoned

    2 tbs butter
    1 egg
    1/2 to 1 cup shredded Cheddar cheese
    Grind or finely chop the beef and onion. Add gravy, wine, and seasonings. Add broth, if necessary, to make a moist mixture. Put beef mixture in a shallow 1 1/2 quart baking dish. Combine mashed potato with butter and egg. Mix well then spread over the meat mixture. Sprinkle with the cheese. Bake at 350 for 30 minutes, or until browned and bubbly. Serves 6.

    Lucky you! From reading the posts, you can tell that not many families will not eat 'ordinary' leftovers. Personally, I never had that problem while married. I was married to a musician and he would eat dinner with us (lunch for him) and then eat the leftovers that I stashed in the oven when he got home (dinner). I never had leftovers! It wasn't until we divorced that I encountered, "Didn't we just have this?" from my daughter! LOL! That was when I decided that I had to be creative and started me on the path to writing the cookbook that I seem to be forever writing about...giggle...

    Oh, Tbrunke, I am so sorry that you lost your husband! It has to be tuff for you;-/ AND, thank goodness that your boys will eat what you provide! That last thing that you need is 'won't touch that.' Yes, I took that from the Lego commercial on TV...giggle...

    Well, I'm glad that your boys are so agreeable;-D Personally, I can eat a well-prepared meal again and again. BUT...I'm in the habit of converting leftovers into something different thanks to my daughter! LOL! So I share...

    I often cook "too much" on purpose so that we have left overs! I will use this recipe this next week ....probably Tuesday cause we're having roast beef on Sunday. It sounds like it is very yummy!

    Angelwhispers4, you are right in that it is similar to shepherd's pie;-D It is what gave me the inspiration to develop this recipe!
    Gramshel (and all), the best thing about this recipe is that it will work for just about any leftover meat -- roast chicken, pork, or turkey. I would just change the gravy to a light gravy vs a brown one. Have fun with it! Make what ever changes that you need to make to suit your family's needs...make it your own!
