American Fish and Chips 2 salmon fillets, with skin ½ tsp salt ½ tsp pepper 2 potatoes, sliced 1 tbs extra virgin olive oil 1/3 cup extra virgin olive oil for frying Place pan over high heat Pour 1 tbs olive oil on pan Place fillets on pan and sprinkle with salt and pepper Let fish cook for about 2 minutes on each side. Set aside when done Pour 1/3 cup olive oil in a deep pan Place potato slices in oil and allow them to fry for about 3 minutes or until crunchy Serve fries with fish when done. Serves 2.
