Any Leftover Meat Hash Recipe
2 large russet potatoes, peeled
¼ pound bacon, diced
1 medium onion, diced
1 clove garlic, minced
1 small red pepper, diced
2 cups cooked beef, pork, lamb or chicken, diced
salt and freshly ground pepper
2 tbs fresh parsley, finely chopped
Put a large pot of salted water on high heat and bring to a boil. Peel and cut the potatoes into eighths, then add the potatoes to the salted water. Lower the heat to a steady boil, and cook until the potatoes are slightly firm, 8 to 10 minutes. Drain and let cool. When the potatoes are cool enough to touch, dice into the same size as everything else.
In a large heavy skillet, sauté the bacon over medium high heat (or, if using bacon drippings, simply melt over medium high heat), until the fat is rendered, and the bacon is just starting to brown.
Add the onion, garlic and red pepper, and sauté until softened, about 7 minutes. Add the leftover meat and potatoes, and stir to combine. Season to taste with salt and freshly ground pepper. Press down on the hash with a spatula to flatten to the bottom of the pan and cook for 5 minutes.
Use the spatula to flip the hash over, and pressing down again, let the hash cook another 5 minutes. Sprinkle the parsley over the hash and serve with poached or fried eggs.
