Vegetable Fried Rice with Spinach
3 cloves garlic, minced
3 tbs olive oil
2 cups cooked rice
1 tomato, chopped
large handful spinach, chopped
other vegetables of your choice, chopped
1/4 cup soy sauce
1 tbs sesame oil
1/3 tsp salt (sea salt is best)

juice from 1/2 lime
Sautee garlic in olive oil for 1-2 minutes.
Add cooked rice and stir to combine. Add remaining ingredients, except for salt and lime juice. Allow to cook for 8-10 minutes, stirring frequently. Remove from heat and stir in the salt. Squeeze lime juice over all and serve!
