This morning I was standing over the sink peeling hard boiled eggs to make egg salad and was thinking how inexpensive they are and I got to wondering how many different recipes there must be out there using eggs. Does anyone have any good recipes for main dishes, side dishes or desserts using eggs?
Here is one of my favorites, the asparagus is expensive but boy is this good.
EGGS OVER ASPARAGUS
2 cans asparagus pieces
3 tablespoons butter, melted
Parmesan cheese, grated
Salt and pepper
Warm asparagus in pan with juice. After asparagus is warmed
Beat eggs in bowl. Pour into fry pan and cook making scrambled
Drain asparagus, pour onto platter. Add butter over top with
salt, pepper and generous sprinkle of parmesan cheese.
Place scrambled eggs on top of asparagus.
Serve Hot. Makes 4 servings.

SCRAMBLED EGGS AND VEGETABLES
2 tablespoons butter
2 tablespoons chopped onion
1 small zucchini, diced small
2 tomatoes, skinned and diced
14 cup cream
Salt and pepper
Heat butter in fry pan; add onion and zucchini'; cook till tender.
Add tomatoes, salt and pepper; cook for 3-4 minutes.
Beat eggs, add cream and mix.
Pour eggs in fry pan with vegetables and cook.
SERVE OVER BUTTERED TOAST.
Makes 4 servings.

Title: Fried Rice
Categories: Favorites, Sidedish, Dinner
Yield: 4 Servings
2 Chicken breasts; cooked *
1/4 c Soy sauce
1 T Oil
2 c Rice; cooked
2 T Oil
2 cl Garlic
1 c Celery
1 c Onion
1 c Mushrooms
* Use any meat you have left over.
Cut into bite size pieces; marinate in soy sauce and pepper.
** Use any veggies you like.
Saute veggies till soft. Add the meat, heat and keep warm. Heat the rice in
a little oil and scramble the eggs. Mix everything together and serve.
