Cheese doesn't go "bad". If it get's mold on it, either cut it off, or wash it off with vinegar. Then after you have the mold off, wrap the cheese in cheese cloth (or any loose weave fabric) that has been soaked in vinegar. Seal in a ziplock type bag and it should keep for a long time.
