"Sour" Salad

1 head romaine, cleaned, dried and torn into bite size pieces
1/2 cup freshly shredded parmesan
1/4 cup freshly squeezed lemon juice
2-3 garlic cloves, pressed
1-2 inch squeeze of anchovy paste
1/2-3/4 cup olive oil
Freshly ground pepper

Place lettuce in wooden salad bowl. In mini chopper, or food processor, place lemon juice, garlic, and anchovy paste. Mix thoroughly. Add olive oil and mix until lemony in color and creamy.

Toss lettuce with dressing until coated( you may not need to use all of the dressing.) Add shredded parmesan, black pepper and toss together.

It is so yummy, like an eggless caesar salad.


Croutons are great with this salad.

My daughter started calling this sour salad and the name stuck. It is really my adaptation of caesar without eggs. She is in college now, and recently called me to get the recipe.
