1 pound Italian sausage (use mild, spicy or whatever your taste is)
2 cans chicken broth
3 cans canelli/great northern beans
1 large can (29 oz) diced tomatoes
1 large onion, chopped
1/2 bag of chopped frozen spinach (optional)

In a large pot (4qt or larger) crumble and brown the sausage (I use bulk sausage but you can use the ones in the casing - just split the casings open and crumble the meat OR you can just slice the links up), add the onion and cook until sausage is browned and onion is translucent.
Add chicken broth (I either buy the carton from the Dollar Tree or use a quart of home canned broth/stock)
Add the diced tomatoes (I also buy these at the Dollar Tree or use home canned ones)
Add the beans (I use 1 quart of home canned great northern beans)

bring to a good simmer and add the optional spinach a few minutes before serving (it adds vitamins and color - you can also use a couple handfuls of fresh spinach instead of frozen)
No other seasonings are needed! The sausage already has it!
Leftovers of this soup are even better
This soup can be done in larger quantities and can be canned too!
