Mashed Potatoes ~ Creamed-Corn-Potato Chowder
8 baking potatoes
2 tsp olive oil
salt and pepper to taste
Scrub and quarter 8 baking potatoes. Boil 20 minutes until tender; drain. Mash with lowfat milk, olive oil, salt and pepper. Reserve half for future use.
Reserved mashed potatoes
1 16-oz can creamed corn
Put reserved potatoes in 2-qt sauce pan, add corn, and add enough milk to barely cover ingredients. Heat mixture over medium heat, stirring frequently, thoroughly.
