Made a whole crockpot full of this and portioned it out for the freezer to bring to work. Simple, healthy, fugal, & delicious!!

In the crockpot:

2 cups baby carrots, sliced lengthwise
1 sweet potato peeled and cubed (1/2 in pieces)
1 onion diced
1 (2 is better) cloves garlic minced
2 cans black beans drained
1/2 tsp red pepper flakes
1/2 tsp black pepper
1 tsp chilli powder
2 cups vegetable juice (spicy v8 works great!)

2 cups vegitable or chicken broth. (water and bullion works too)

Optional: 1 lb browned spicy Italian sausage. Mmmm

Cook on low 6-8 hours...
