    Piggy January 5-11

    I haven't received the book that I was hoping for, so it is dinner as usual! LOL!
    Sunday -- rice pilaf with chopped chicken hearts and gizzards...$4.20
    Saturday -- ham steak, baked potatoes, and creamed spinach... $4.50
    Monday -- smoked sausage skillet dinner...$7.50
    Tuesday -- beef ribs, roasted potatoes and buttered broccoli...$12.60
    Wednesday -- soup using Sunday's leftovers...$0
    Thursday -- ham and spinach pasta casserole...$1
    Friday -- Monday's leftovers...$0
    Saturday -- leftover ribs, mashed potatoes and creamed spinach...

    Total this week from the mark-down bin...$30.80.
    What did you spend?!!

    Your whole menu looks SO good!! Especially Tuesday...do you marinate the ribs? How do you cook them??
    Yep, it's one of those kind of nights...just FULL of questions...lol
    Also, I love spinach...raw, steamed, sauteed, sauteed with onions, sauteed with scrambled eggs...love it most ways...
    but I've never had creamed spinach...how do you cook it this way?

    I marinate the ribs for a couple of hours or overnight in whatever strikes my fancy at the moment...giggle...I almost always use a couple tbs of mustard or mayo as a base and add other ingredients. Right now I'm thinking spicy so it'll probably be mustard, tabasco, Chinese mustard, wine, and garlic;-D Then I dump everything into the crockpot on low for 4-6 hours.
    FYI on the above pilaf: I boiled the hearts and gizzards until tender, use the broth to make the rice, chopped the hearts and gizzards, then mixed them into the pilaf.
    Creamed Spinach
    2 cups chopped, cooked spinach
    2 tsp finely minced onion
    1 tsp salt
    dash nutmeg
    1 cup heavy cream
    1 tbs butter
    1 hard-cooked egg, sliced
    Heat spinach in saucepan. Add onion, salt, nutmeg, cream, and butter. Mix well and heat through. Spoon onto serving dish and top with hard-cooked egg slices. Serves 4.
