Quick Stir-Fry Mock Chicken Salad
1 vegetarian Chicken Free Chicken, cut into 1 inch strips
2 oz fresh green beans
2 oz red or green bell pepper, cut into 1/4 inch strips
1 oz red onion, sliced
1 tomato, sliced
2 tbs olive oil
2 tsp balsamic vinegar

garlic, to taste
Stir fry onions and pepper for two minutes. Add green beans, garlic and Chicken Free Chicken. Stir-fry 3 additional minutes. Served hot or chilled.
