Sausage and Tomato Pie

This is an easy winter warmer. Because its a family recipe there
are no exact ingredients (we have another called all-in-stew that we
just chuck anything in) except the sausages, tomatoes and mashed


1 pound sausages (cut into pieces) or sausagemeat (cut into pieces)
1 can tomatoes (14oz can), juice drained and saved, tomatoes chopped
up in the can (saves mess)
Seasonings - up to you - we have used mixed herbs, curry powder,
chillies, whatever (obviously not all at the same time)
Onions - chopped up (if you have them)
Mashed Potato (either made for this or left over)

Lightly brown the sausages (and soften onions if using), add the
tomato juice and let it reduce a little (usually do that whilst
chopping up the tomatoes in the can). Add the tomatoes and whatever
seasoning you fancy.

Heat oven to 400F. Once sausage/tomato mix is bubbling put into a
baking dish (casserole or whatever), top with the mashed potato.
Put into oven for about 20 minutes until top is brown and crispy.

This is filling and warm on cold days. We have added peas and stuff
before now but the whole point of the recipe is that it is
variable. it a "pauper's feast".
