Cinnamon Caramel Apples

2 packages (14 ounces EACH) caramels
3 tablespoons milk chocolate chops
3 tablespoons water
1 teaspoon ground cinnamon
3/4 teaspoon vanilla extract
8 popsicle sticks
8 large tart apples
Chocolate covered toffee bits, finely chopped salted peanuts &
cashews, flaked coconut, M&M Mini's, and or chocolate sprinkles*

*Toppings optional, and up to your tastes*

In a microwave safe bowl, bombine the caramels, chocolate chips,
water, cinnamon, and vanilla. Microwave, uncovered, on high for 2
minutes, stir. Microwave 1 minute longer, or until caramels are

Insert popsicle sticks into the apples, dip into caramel mixture,
turning to coat. Roll in or press on the desired toppings. Place on
waxd paper, let stand until set. Yeilds 8.

**Note: recipe was tested with hershey caramels in an 850 watt
microwave, times may vary if the microwave is different wattage,
watch the mixture carefully!
