Creole Chicken

This is a family favorite and easy to prepare in the slow cooker. The
chicken has a bite to it but one can control the heat by limiting the amount
of
hot pepper sauce used. Even if you don't like very hot food, include a few
drops for flavor. (For the ham, I get the deli to slice about a one inch
section of Virginia Ham). Prep Time: approx. 10 Minutes. Cook Time: approx. 5
Hours 20 Minutes. Ready in: approx. 5 Hours 30 Minutes. Makes 6 to 7
servings.

8 chicken thighs
1 green bell pepper, chopped
6 green onions, chopped
1 (16 ounce) can diced tomatoes
1 (6 ounce) can tomato paste
1/4 pound cooked ham, cut into
one inch cubes
1 teaspoon salt
2 dashes hot pepper sauce
1/2 pound Polish sausage, sliced diagonally
3 cups cooked white rice

Directions
1 In a slow cooker combine the chicken, bell pepper, onions, tomatoes,
tomato paste, ham, salt and hot pepper sauce. Cover and cook on low for 4 to
5 hours.
2 Turn the slow cooker control to high. Add the sausage and the cooked
rice. Cover and cook on high for 15 to 20 minutes or until the sausage and
rice are hot.

My notes. I cut the meat from the chicken first and I used a Creole Spice (1/2
tsp) that I got from all recipes instead of the hot sauce. I also didn't use
ham (too expensive) used only 1/2 bell pepper, and used a 10 oz can of Rotel
diced tomatoes with 6 oz water added to make up for the volume. Excellent!!!


Creole Seasoning Blend
This Creole seasoning blend is great for seasoning rice, meats, soups and
stews, or anything that needs a flavor boost. Also makes a great gift when
placed in a decorative jar with recipe attached. Prep Time: approx. 5
Minutes.
Ready in: approx. 5 Minutes. Makes 1 1/4 cups (20 tablespoons) (20
servings).

2 tablespoons garlic powder
2 tablespoons dried oregano
2 tablespoons dried basil
1 tablespoon dried thyme
1 tablespoon black pepper
1 tablespoon white pepper
1 tablespoon cayenne pepper
5 tablespoons paprika
3 tablespoons salt


Directions
1 In a small bowl, combine onion powder, garlic powder, oregano, basil,
thyme, black pepper, white pepper, cayenne pepper, paprika and salt.
Store in airtight container.
