This recipe calls to be done in a skillet but I just threw everything (without browning the meat) in the crockpot & cooked in on high a couple of hours. It would be good either way.....little versatility for those without a crockpot. Easy to throw in & wait for it to cook for you if you want to use your crock. Enjoy!!

Sweet & Sour Skillet Dinner

1 1/2 lbs boneless chicken (can also use pork or beef)
1 tbsp of oil (omitted in the crock)
1 med onion, chunked
1 glove garlic, minced (can also use just garlic powder)
4 med carrots, sliced (don't be afraid to throw in more)
1 med green pepper, chunked
1 can pineapple chunks (& juice!)
1/4 c vinegar
3 tbsp brown sugar
3 tbsp ketchup
3 tbsp soya sauce
1 tbsp cornstarch
1 tbsp ground ginger (optional - I didn't use it.....)

Cut meat into bite size pieces (for the crock.......I used chicken breasts & left them whole & didn't brown). Brown meat on medium high. Lower heat, & add onion and garlic. Cover & cook 10 minutes. Add carrots & green pepper. Combine pineapple and juice, vinegar sugar, ketchup, soya sauce, cornstarch & ginger. Stir into skillet, cover & simmer for 10 minutes or until meat is tender.

Serve this one over rice or ramen noodles & it's a whole meal deal!
