Parmesan Spinach Casserole

Here's a tasty way to slide in a veggie at breakfast... 2 pkgs (10 oz) frozen, chopped spinach 2 eggs-well beaten 2 tbsp butter-softened 2 tbsp cracker crumbs-(I used crushed Ritz type crackers) 1/2 cup cottage or ricotta cheese-(I used low fat variety) 1/4 cup Parmesan cheese-shredded 3

    Ribbon Parmesan Spinach Casserole

    Here's a tasty way to slide in a veggie at breakfast...

    2 pkgs (10 oz) frozen, chopped spinach
    2 eggs-well beaten
    2 tbsp butter-softened
    2 tbsp cracker crumbs-(I used crushed Ritz type crackers)
    1/2 cup cottage or ricotta cheese-(I used low fat variety)
    1/4 cup Parmesan cheese-shredded
    3 tbsp fresh minced parsley OR 1 tbsp dry parsley-crushed
    salt and pepper-to taste

    1. Defrost spinach; drain and squeeze dry.
    2. Add all ingredients into a large bowl, including drained spinach; blend together.
    3. Pour mixture into prepared 1 1/2-2 qt casserole dish. Bake at 350 for 35 minutes.
    4. Can add additional shredded Parmesan cheese, as topping, 5 minutes before end of cooking time.
