    grilled cheese samiches and soup has to be one of my favorite meals...especially when the weather turns cool! What are you doing with your leftover roasted chicken? ...giggle... I'm always looking to see what others do...giggle...
    On a side note (that you may appreciate, my friend), I've decided that I will enter a recipe for every single category at the state fair next year! I learned that they offer cash prizes -- $500-1000 -- for winning recipes! Looking at some of the entries tells me that 'I CAN BEAT THAT!' Trust that if I use any recipe that is not my own (borrowing from my friends here), I WILL share any rewards! LOL!

    Let me be one of the first to wish you the best of luck in next year's fair!!!!
    Hope you win EVERY category!!

    The roast chicken was seriously plucked of it's meat, then boiled with some veggies.
    I drained the stock and let it cool in the fridge overnight, then skimmed the layer of fat off.
    Froze both the left over meat and stock. Later on, gonna use some of the stock and all of the meat to make chicken enchiladas. Remaining stock will be used later...
    Boiled mashed up veggies, skin and fat scraps went into the dog good bowls...

    Oh! Good stuff for your fur-babies!
    Your 'future' plans sound yummy! At this time of year I start thinking about holiday leftovers so I'll be posting a bunch of those in the leftover forum. Let me know what you think or if you come up with any variations of what I post My goal is not only show how you can afford to eat well inexpensively, but to inspire those like yourself to stretch that dollar further or give us their adaptation of our meal-stretcher recipes...giggle...

    Thanks for the good wishes! I figure that I have a year to plan and, as I said, if I think that somebody else's recipe is better than any of mine, I will give credit where due and share the rewards;-D
