Breakfast Frittatas -- Mexican or Italian
You can go 'gourmet' while camping! So impress your family and/or friends...giggle...
Italian Style Frittata - Ingredients
10-12 eggs
olive oil
garlic
zucchini
broccoli
mushrooms
Italian herb seasoning
salt & pepper
Toppings:
thinly sliced tomatoes

fresh basil leaves
shredded mozzarella cheese
Mexican Style Frittata - Ingredients
10-12 eggs
olive oil
onion
red & green bell pepper
jalapeno
Mexican blend seasoning (cumin, chili powder, garlic powder, oregano, paprika)
salt & pepper

Toppings:
thinly sliced tomatoes
fresh cilantro leaves
shredded Mexican four-cheese

Use a #10 Dutch oven
Sautee the veggies along with the seasonings for a few minutes and stir constantly (on bottom coals).
Add the mixed eggs.
Bake until the eggs are firm (coals top & bottom).
Now add the thinly sliced tomatoes topped with the basil or cilantro leaves, and then add the shredded cheese.
Bake (with just top coals) until the cheese is completely melted, about a minute or so.
