Cheesy Mashed Potatoes
2-3 lbs potatoes, peeled
and cut into 1-inch chunks
3/4 cup Evaporated Milk
OR Half-n-half
1/2 stick butter or margarine
1 cup shredded cheddar cheese
Put potatoes in large saucepan.
Cover with water, bring to
a boil. Cook over medium-high heat
for 15 to 20 minutes or
until tender; drain.
Return potatoes to saucepan,add milk and butter.
Beat with hand-held mixer until smooth or just
use the potato masher for chunkier potatoes . Stir in cheese.
Season with salt and pepper or chives if you
like them.
