Key Lime Cheesecake
1 1/2 cups graham cracker crumbs
2 Tablespoons sugar
2 Tablespoons margarine melted4 packages cream cheese
1 cup sugar
1 Tablespoon lime zest
1/2 cup key lime juice
1/4 teaspoon green food coloring
3 eggsSpray a 9 inch spring form pan with cooking spray. Combine graham cracker crumbs, sugar and margarine in a small bowl. Press crumb mixture into prepared pan.
Mix cream cheese, and sugar until creamy. Add lime zest, juice and food coloring. Mix until well blended.
Add eggs one at a time.Pour batter into prepared pan. Bake at 325 degrees F for 1 hour and 20 minutes or until set. Allow cheesecake to cool.
Place in refrigerator overnight.
To make extra special before serving take a shamrock cookie cutter and gently place it on the cake then sprinkle green sugar sprinkles into the cookie cutter. Lift cookie cutter and repeat two or three times.Thanks; Virginia
