I came up with this recipe and we just love it. It's similiar to the middle eastern flatbreads you see in gourmet shops but made whole grain.

Whole Grain Flatbreads

2 cups whole wheat flour
1 cup rye flour
2 1/2 cups all purpose flour
1 tbsp sugar
2 tsp yeast
3/4 tsp coarse salt
2 cups water
1 tbsp olive oil

Mix together all dry ingredients in a large bowl. Add water and mix to form dough. Knead briefly. Oil another bowl and place the dough in it. Cover with plastic wrap and set aside to rise for 2 hours. Divide dough into 8-10 balls and roll out into 8 inch disks. Place on baking sheets sprayed with non-stick spray. Cover and let rise another 30 minutes. Bake 12-15 minutes at 350 dgrees or until slightly golden on top.

These are great with cream cheese spreads, dips, hummus, etc. I like to just rip them into pieces and eat them with sliced cheeses, fresh fruit, veggies and sliced turkey or chicken breast. That and something to dip them in make a great picnic style meal.
