Oatmeal Spice Cookies

Oatmeal Cookies with ginger and cinnamon, along with raisins or dates and
chopped nuts.

INGREDIENTS:

a.. 1 cup brown sugar, firmly packed
b.. 3/4 cup margarine, softened
c.. 1 egg
d.. 1/4 cup light molasses
e.. 1 teaspoon vanilla
f.. 1 3/4 cups all-purpose flour
g.. 2 teaspoons baking powder
h.. 1 teaspoon ground cinnamon
i.. 1/2 teaspoon ground ginger
j.. 2 cups quick-cooking oats
k.. 1 cup raisins or chopped dates
l.. 1 cup chopped pecans or walnuts
PREPARATION:


Heat oven to 350?. Lightly grease baking sheets. In large bowl, with electric
mixer, cream brown sugar and margarine until light. Add egg; beat well. Blend in
molasses and vanilla. Blend in flour and remaining ingredients. Drop by
teaspoonfuls onto prepared baking sheet, about 2 1/2 to 3 inches apart.

Bake cookies for 8 to 12 minutes or until browned. Immediately remove to wire
racks to cool.
Makes about 48 cookies.
