one of the easiest ones i have seen is simply 1 16 oz
tub Cool Whip (thawed) mixed with one box of instant
pudding, any flavor. It makes a nice, light icing
(though you will have to refrigerate any leftover cake
— wait, leftover cake? What’s that???).

I have done
this with pudding flavors of lemon, french vanilla,
banana, coconut, and pistachio. But I think it would
work with any.
