    Default Thrifty Homemakers Banana Bread or Muffins"

    With Autumn just around the corner, thoughts of baking yummy stuff will be
    coming to mind. I call these "Thrifty Homemakers Banana Bread or Muffins"
    This recipe costs less than .50 cents to make and uses no milk or eggs.
    Also it's pretty much just stirred together, no beating required. This is a
    good one to let the kids stir up too.

    Start with 3 over ripe bananas mashed up in a mixing bowl. Add 1 cup of
    sugar and 1/4 cup oil and mix well. Let sit 5 minutes. In a seperate bowl
    blend 2 cups flour, 1 tsp. soda, and 1 tsp. salt. Gradually add to banana
    mixture and stir until flour is all well blended. Do not beat.
    (*optional--stir in chopped nuts, raisins, etc. if desired.)
    Pour into well greased bread pan or muffin tins. Bake at 350 degrees for 15
    to 18 minutes or until done.
    Makes one loaf or approx. 16 small muffins.

    thanks! to change it a bit...substitute a small can of pumpkin for
    the bananas and bake an additional 10 minutes.

    I just made this recipe with the exception of vanilla extract. I was out of vanilla, it's snowing here and the grocery store isn't on my list of errands until next week. I rummaged thru the baking shelf in my pantry and found the coconut extract.
    BOOM! Paradise Banana Muffins were born!
