thurs - baked chicken, smashed potatoes, corn on the cob

any left overs get frozen into single serve portions because hubby works away and I like to make his meals easy one him when he is gone.

I love quail also. I was able to get my hands on 20 of them so he has been ready for me to cook them. I made my menu before I knew he was able to come in from work. so we are putting them on next week's menu. let me know what night is good for you and we will make sure to save you a plate!!!!

The week went mostly as planned except for Monday. Chicken tacos got cancelled because my husband came home with 15 pounds of fresh catfish. Switched to fried catfish, fries and crawfish etouffee over rice. Yes, it was about a million callories but wow was it good. I took the left over chicken and made chicken enchiladas and put them in the freezer for my husband to bring back to work with him when he leaves again.
