I challenge everyone to only work with ingredients from the mark-down bins. This means that you have to think on your feet while in the store! LOL! Here's what I came up with for four-serving meals (as many of you know, I'm a single that cooks like she had a family...giggle...so leftovers go to

    Book Challenge!

    I challenge everyone to only work with ingredients from the mark-down bins. This means that you have to think on your feet while in the store! LOL! Here's what I came up with for four-serving meals (as many of you know, I'm a single that cooks like she had a family...giggle...so leftovers go to the freezer for future meals if not 'recycled'):
    Sunday -- hot dogs with chili and cheese, French fries...$2.79
    Monday -- turkey-neck soup (I eat this year-round and it's one of my favorite meals) with crusty bread...$2.10
    Tuesday -- hot-dog burritos and salad...$.69
    Wednesday -- baked cod fillets with broccoli Alfredo...$.81
    Thursday -- broiled chicken breasts with leftover broccoli Alfredo...81

    Friday -- left-over chicken in cream sauce over boiled potatoes and broccoli -- $5.29
    Saturday -- stuffed roasted chicken (oh the meals that I can get from this), gravy, and green beans...$12.81
    Grand total is $31.30! Granted this menu used several items on hand and I tried to adjust the cost accordingly, but bottom line...I fed myself and portioned leftovers for less than $40;-D

    I love this challenge!! Count me in on trying this. I'll be having roasted whole chickens later this week and am planning on making several freezer meals from them, plus having at least one planned over meal.
    Love the way you used the leftovers and made new meals!!

    Girlfriend! Since you are planning whole roasted chicken, check out my recipes/menu plans for five meals from one chicken! Granted it's for store-bought rotisserie chicken, but there's no reason that you can't use or adapt...giggle...

    Okay...so far, Since the 28th, the only meat I've used NOT marked down, was the grilled steaks we had yesterday. They were DEER round steaks that Hubby got last year.

    Mos-Wow! I absolutely LOVE the way you used the whole roasted chicken!!
    Fantastic savings and ideas. Thank you for sharing them!

    I loved the idea of 1 Chicken, 5 meals so here is the menu plan I came up with

    1 Deli Chicken (it was 4 lbs), roasted potatoes, broccoli
    Chicken Corn Chowder
    Chicken and CousCous salad
    Adobe chicken sandwiches (I used the chipotle mayo recipe here and just mix chicken chunks and chopped pickled jalapeno peppers)

    It's only 4 meals because I chopped it all up and separated the meat and that's what I had enough for. Well, I guess I can make broth/soup from the bones, but I'd rather let the racoons have the carcass.
