    Default Clone for 'Fudrucker's' Brownies

    Ingredients:
    For eight 8x13 inch pans

    Directions:
3-1/4 quarts eggs 6 lbs butter 12 lbs sugar 3/4 cup vanilla 5 lbs bun flour
(high gluten) 6 cups cocoa 7 tsp baking soda 3 tsp baking powder 1/2 tsp
salt 2 bags marshmalllows (1 lb each) 1 cup pecan pieces per pan Butter &
    sugar in a big bowl-mix at speed 1 for 2-1/2 minutes. Add vanilla-mix 4
minutes at speed 1. Add flour, cocoa, soda, baking powder, and salt. Add
marshmallows; mix at speed 1 for 5 minutes, then scrape bowl down. Mix at
speed 2 for 10 minutes. Cook 15 minutes-drop pans twice to get rid of gas.
Add pecans on top of pans; scatter around. Bake 10-15 more minutes. In 10
minutes, start testing with toothpick. When product does not stick, take out
& let cool. Note-baking pans must be greased, then lined with baking paper
before filling. Each pan should have approximately 4 lbs batter when filled.
Spread evenly in pan before baking.

    Re: Clone for 'Fudrucker's' Brownies

    Hi all,

I used a conversion chart to change this recipe to 2 pans so I cut it
one fourth. I wouldn't try to cut it anymore but you can if you want.
I will warn you that when you cut a big recipe even correctly, it may
never turn out. Why do I say this? Because I have a recipe from a
culinary institute in New York in my cookbook and the author says
"Don't even try to cut this down." He tried many times and it was a
complete disaster. Note: to measure eggs, break into liquid
measuring cup until you have the amount you need.

    fuddrucker\'s nut brownie

    3 1/4 cups egg
    1.5 pounds butter
    3 pounds sugar
    3 tablespoons vanilla
    1.25 pounds flour
    1 1/2 cups cocoa
    1 3/4 teaspoons baking soda
    3/4 teaspoon baking powder
    1/8 teaspoon salt
    0.5 pound marshmallows

    The conversion calculator is here:

    http://www.fruitfromwashington.com/Reci ... rsions.php

I hope it works for you.
