SPAGETTI SAUCE


5 lbs ground beef
3 large onions, chopped (about 2 lbs)
1/3 cup garlic, chopped or crushed
2-3 green bell peppers, chopped

5 cups tomato sauce, OR crushed tomatos, OR tomato puree (about 1/2 of a #10
can)
1/3 cup salt
1-2 tablespoons ground black pepper
1/3 cup oregano leaves OR 1-2 tablespoons ground
1 tablesoon sage (rubbed or ground)
1/3 cup parsley flakes

Place ground beef, onions, bell peppers, garlic in deep frying pan with a
lid. Cook, covered, over medium heat until ground beef is brown all the
way thru. Stir often, breaking up the meat into small pieces. Drain off
fat as needed, and throw it away. Add the remaining ingredients to the pan,
and simmer over low heat for about 20-30 minutes.

NOTES: This recipe makes about 15 cups of sauce, at about 25-30 cents per
cup depending on cost of ingredients. I freeze it in plastic containers
that hold about 5 cups each. I use whatever noodles I can find the
cheapest -- usually macaroni noodles.

Crushed tomatos, whole tomatos (chopped up or crushed), can be substituted

for the tomato sauce. Fresh spices can be subsituted for dried, and the
amounts changed to suit your tastes. I use chopped or crushed garlic from a
jar as this is easier for me. Subsitute fresh chopped garlic or garlic
powder if you prefer. One could leave out bell peppers and/or add other
things like mushrooms.

I buy tomato sauce in #10 cans, and garlic in two pound jars at Costco as I
find them cheapest there. I buy ground beef when I find it for $1 or less a
pound. You could substitute ground sausage, turkey or chicken for the
ground beef. Or you could leave the meat out entirely, resulting in a fat
free sauce, although with less than the 15 cups mentioned above.
