One of my favorite sandwich spreads is something they used at a baby shower of
mine years ago. Now (4 kids later) it is something my kids and I still enjoy
and they go very quickly. It sounds weird, but is a delicious combo if made
exactly as described. It's not extremely cheap because of the cheese, but it's
much cheaper than lunchmeat, and healthier too, no nitrates.


1 cup shredded carrot
1 cup finely shredded sharp cheese
Real Mayo to moisten
Whole wheat bread
Salt and Pepper to taste

Basically I've forgotten the instructions, because it's been years and it's
ridiculously simple. Just blend the first 3 ingredients and salt and pepper it

to taste and spread on whole wheat bread. I have found that the real mayo and
the whole wheat really add to the taste of the sandwich and it really isn't the
same any other way. Of course, I am prejudiced. Makes about 4 or 5 sandwiches.
I cut them into quarters as they are pretty rich.
