Raspberry-Rhubarb Leather
8 cups chopped rhubarb
8 cups raspberries(or sub other fruit)
?-3/4 cup honey

Mash raspberries in pot, add rhubarb & honey & stir. Bring to a boil stirring occaisionally. Simmer with lid off for 30 minutes. Spread on plastic wrap on baking sheets. Cook in a 250? oven for 2-2? hours or cover with screen & lay in the hot sun for one full day. It is done when no longer sticky. Peel plastic off back & roll for storage. It keeps well in airtight plastic container for months. Leather may be eaten like candy or used in recipes instead of dried fruit.
