Quick Chutney: Saute a minced red onion in a bit of olive oil until

softened.Add several chopped peaches,splash of apple cider vinegar and a

spoonful of brown sugar.Cook mixture over low heat until fruit

softens.Season with salt and pepper and spoon over grilled fish


Perfect Poach: Combine 3 parts water and 1 part sugar in a large

saucepan along with a few drops of vanilla extract.Bring to a boil.Stir

to dissolve sugar.Add halved pitted peaches and simmer over low hat for

about 8 mins or until fruit softens.Remove peaches to a glass dish and

drizzle some of the poaching liquid.Let cool completely in the

fridge.Serve with whipped cream


Fruit Sticks: Thread peach and plum wedges onto wooden skewers along

with pineapple chunks and banana slices. Mist with cooking spray.Then

grill over medium heat for 2 mins turning once.Sprinkle warm kabobs with

a pinch of cinnamon sugar and serve with vanilla yogurt for dipping


One Minute Snack: Spread peach or plum halves (pitted) with a layer of

reduced fat cream cheese. Drizzle fruit with honey and then sprinkle

with sliced almonds


Ripe Roast: The next time you roast a chicken place halved peaches or

plums cut side down in the the bottom of roasting pan.Drizzle fruit with

olive oil and roast as usual.Serve chicken with the caramelized fruit

and be sure to spoon some sweet pan juices on top

sliced peaches and blue cheese crumbles.Dress with your favorite



Upside Down Cake: Cover the bottom of 2 well greased 9 inch round cake

pans with a layer of plum wedges.Sprinkle with brown sugar and set

aside.Prepare a box of yellow cake mix as label directs.Divide batter

among plum lined pans and bake as directed.Invert cakes before serving


Sunshine Smoothie: Pulse chopped fresh peaches in a blender until

pureed.Blend in a scoop of vanilla ice cream or frozen yogurt and a

splash of orange juice.Garnish with peach wedges


Sweet Tarts: Roll a sheet of thawed frozen puff pastry into a 10" by 15"

rectangle and cut into six 5 inch squares.With a knife score each piece

1/2 inch from the edges to mark a smaller square.Pierce center of dough

with a fork.Bake pastry at 350 for 10 mins.Spread apricot jam into each

shell and top with sliced peaches. Brush with another layer of

jam.Sprinkle with sugar and bake 20 more mins


Fruity Pilaf: Prepare basmati rice as package directs.Season it with

fresh thyme,salt and pepper.Before serving.Stir in diced plums, toasted

pecans and golden raisins
