I'm submitting this recipe because I believe that everyone deserves a
chance to have a really good piece of cheescake at least once in their
life. This is a fairly inexpensive recipe and can be made cheaper if
using sale items, store brands, and/or coupons. I have also included
a slightly more expensive (but yummy) variation of the recipe.

Cheesecake:

2 8oz. pkgs. cream cheese, softened
1 cup sugar
1 tsp. vanilla extract (optional)
2 eggs
*1 can of cherry or blueberry pie filling (optional)
1 9-inch ready made graham cracker crust (or make your own)

Let cream cheese soften to room temperature. Cream the cream cheese
and sugar together with an electric mixer until smooth. Mix in the
vanilla extract if you are using it. Add eggs and beat until just
mixed in (Do not overbeat the eggs or you will have a really nasty
cheesecake. Trust me.). Pour batter into graham cracker crust. Bake
in a 350 degree oven for 40-45 minutes. Do not worry if there are
cracks in the cheesecake. This is normal. It also may puff up some
while baking. It will deflate as it cools. Top with pie filling when
cool (optional).

*If you double the recipe to make 2 cheesecakes, one can of pie
filling will easily cover 2 pies. So, if making a single batch, you
may want to just use half of the can of pie filling and reserve the
other half for a different use or just use the whole can for a
supremely fruity cheesecake.

Variation:

Mix batter as in original recipe. After batter is mixed, stir in one
cup of mini chocolate chips and use an Oreo cookie crust instead of a
graham cracker crust. Bake as usual. When cool, drizzle with
storebought or homemade chocolate syrup.
