Fresh Sweet Potato Fries
with Garden Garlic Seasoning
Serves 4 to 6.

6 to 7 fresh sweet potatoes (yams), from your vegetable garden.
4 tablespoons olive oil
2 cloves of freshly crushed, garden garlic, from your vegetable garden.
2 tablespoons freshly chopped, garden parsley from your herb garden.
1 teaspoon chopped fresh garden thyme or 1/2 teaspoon dried thyme.
1 teaspoon Salt, plain or iodized.
1/2 teaspoon fresh ground pepper.
1 teaspoon garlic powder.
Vegetable oil, as required.

Close and preheat your oven to 450?F.

Wash, peel, and cut the sweet potatoes into 1/2 inch thick slices.

When finished, cut again into 1/2 inch wide sweet potato strips.
Brush or spray a large baking sheet with vegetable oil.
Spread sweet potatoes in single layer on the prepared baking sheet.
In a small mixing bowl, add the olive oil, crushed garlic, parsley, thyme, salt, pepper and garlic powder.
Mix well and brush the mixture over the sweet potatoes.
Bake until sweet potatoes are tender and golden brown, turning occasionally. Bakes in about 30 to 40 minutes.
Move the baked sweet potatoes to your serving dish.
Sprinkle again to taste, with additional salt and pepper.
