I've never frozen it, but my method has been working for years...
I put the garliccloves (ends trimmed off) in a food processor and drizzle in olive oil. Then I put them in a recycled jar with a tight sealing lid. leave it in the fridge for constant minced garlic. I've never had an issue. THe color changes a bit, but it never goes bad.
