Heavy Cream Cake & Whipped Cheese Frosting
use the real deal (do not make your own heavy cream)

I just made this cake and the frosting -- and the cake is so good you really don't need frosting!
Heavy Cream Cake:
the heavy cream provides the fat in this recipe
bake time: 30 minutes
prep time: maybe 10 minutes
preheat oven to 350, grease and flour 2 8-inch round pans
(once batter poured in evenly, it will look it's not enough...but it is)
1 cup fine granulated sugar (boxed domino cane sugar)
1-2/3 cups SIFTED AP flour
2-1/2 teaspoons baking powder
3/4 teaspoons salt
1 cup heavy cream (or heavy whipping cream -- they are the exact same thing)
1 teaspoon vanilla extract
beat eggs until thick and lemon colored; gradually beat in sugar. Sift together the dry ingredients that are left, gradually add dry ingredients alternating with the heavy cream and vanilla. beat well. pour evenly into prepared pans and bake. after 30 minutes, test the center with a wooden skewer -- if it comes out clean, they are done.
Whipped Cheese Frosting:
not too sweet - great for stand mixer.
1 8-oz package cream cheese, softened
1/2 cup fine granulated sugar
2 teaspoons vanilla extract OR other flavored extract (I used raspberry extract in mine)
2 cups heavy cream
combine everything except the cream in a mixing bowl of stand mixer, use the whisk attachment and mix until smooth. Slowly add the heavy cream. scrape bottom and sides often. Continue beating until stiff peaks form. (I added 1/2 teaspoon of red colored sugar to get the pink tint).
frost, top with fruit, and enjoy!! <3Only in the United States is it permissible to sell food without the labeling of Genetically Modified Organisms. This needs to stop, we DESERVE to know what is in our food!
