The crunchy thingy is called a churro or also known as a Mexican cruller. Here is a recipe from food network: Churros Recipe : : Recipes : Food Network

They are called cinnamon twists and I have been told they simply fry spiral pasta and shake the puffs in cinnamon sugar. Didn't say if the pasta is cooked first or just dry fried. Anyone know?

that is it, thank you guys for figuring out what I was thinking about. getting old is really bad because the mind is always the first to go.

it would be easy to try and fry a cooked pasta and a non-cooked pasta and see how they turned out. of course only I would actually be the one to try that idea. LOL!

The Cinnamon Twists are nothing more than uncooked spiral pasta that are fried. Once you remove them from the oil, put them in a clean trash bag with cinnamon and sugar and gently mix. The amount of cinnamon and sugar is up to you.
