Chicken Salad Supreme
4 cubed cooked chicken
1 1/2 cups chopped celery
3 green onions sliced
1 6-oz can sliced water chestnuts, drained
2 medium pieces candied ginger, finely chopped
1 tsp salt
1 cup real mayonnaise
1/2 cup heavy cream, whipped
1/2 cup sliced seedless grapes
Mix chicken, celery, onions, water chestnuts, ginger and salt. Fold mayonnaise into whipped cream and combine with chicken mixture. Chill for at least 1 hour. Garnish with grapes. Serve over lettuce, or into the center of a broccoli or spinach mold.
